INGREDIENTS:


1 Tbsp olïve oïl
2 cloves gârlïc, mïnced
1 onïon, fïnely chopped
16 oz penne pâstâ
1 cân quârtered ârtïchokes, drâïned
2 Tbsp butter
2 cups chïcken broth
1 cup mïlk
1 cup spïnâch, roughly chopped
1/2 cup shredded Gruyere or Swïss cheese
1/4 cup grâted Pârmesân cheese
1/8 tsp crushed red pepper
sâlt ând pepper

INSTRUCTIONS:


1. Heât oïl ïn lârge pot over medïum heât. Add onïon ând gârlïc ând cook for 3-5 mïnutes or untïl softened.

2. Add pâstâ, ârtïchokes, butter, chïcken broth ând mïlk ând brïng to â boïl. Reduce heât to sïmmer ând cook for 10 mïnutes, stïrrïng occâsïonâlly.

3. Add spïnâch ând cook for ân âddïtïonâl 8-10 mïnutes. Remove from heât ând stïr ïn cheeses ând crushed red pepper. {If the pâstâ ïs too thïck, thïn wïth extrâ mïlk}. Seâson wïth sâlt ând pepper.
